I went back a few seconds later and it was zero again.

I tried to reproduce it but wasn't able
My guess is you had liked the post, clicked to go to the next page, and then went back to the previous page(using the back button) and got the cached page that showed 0 where as the site knew there was 1. So upon clicking it, you saw a 0 turn to -1 and the server saw a 1 turn to 0, which was the reality.

When it removes a like it's usually that it thinks you have liked it before and you're just undoing that like. Or maybe it was confused. Or maybe I got that plugin from DS?
